- We have ALWAYS manufactured “all-natural” products. This is nothing new for us.
- Our ingredient statements are short and clean.
- Our filling-to-dough ratio is among the highest in the industry. Our ravioli are always 50-60% filling to 40-50% dough.
- We purchase whole wheels of imported cheese that are grated fresh for everyday use.
- We purchase our fresh vegetables on a daily basis to ensure the highest quality possible.
- Only fresh dairy cream, Impastata style Ricotta, fresh mozzarella and real butter are used.
- We use fresh chicken and beef that are specified in our vendor approval program.
- We never use precooked or prepackaged ingredients. We make everything from scratch!
- Our pasta is rolled and laminated, creating thin pasta that is tender to the tooth but withstands the rigors of a foodservice environment, ensuring that it will withstand the consumer kitchen perfectly.
- There is no compromise when it comes to sourcing ingredients. We have a rigorous vendor approval program in place, and our quality standards are very high. Our suppliers for ingredients and services have become partners and understand our needs.
- We use Extra Fancy Durum Wheat Flour, and it is the foundation of our product line. It is milled to our specifications and shipped under lock and key. We will not accept anything that does not match our specifications.
- We have extensive training programs, low employee turnover and a real caring attitude among our staff.
